A key feature here is that they age the neta (sushi topping) to bring out each fish's character and umami to the fullest. The shari (sushi rice) is said to use akazu (red vinegar) and shirozu (white vinegar) depending on the topping.
The sushi, carefully shaped by skilled chefs, is said to be excellent across the board. At the counter seats, they serve each piece right after it is made.

For both lunch and dinner, they offer two types of Omakase courses. You can choose between a sushi focused course and a course that also comes with otsumami (small plates), and lunch is by reservation only.
The otsumami also show the careful work of skilled chefs and are said to be delicious. They also have a wide selection of Japanese sake that pairs well with the sushi.

I visited for lunch with a coworker. As you’d expect? the menu was all maguro (tuna)! I had a hard time choosing, but I went with the sushi set. They say the maguro is fresh and has never been frozen. Even the akami (lean tuna) had a good amount of fat. It was delicious. It was a great meal.

I usually like lean tuna, but the chutoro is great too! The otoro is also delicious, with sweet rich fat. The savory taste of inosinate fills your mouth! I got to enjoy a honmaguro (Pacific bluefin tuna) Rice bowl at a good price from the morning.

The photo shows the specialty dish, battera (pressed sushi from Osaka). It is an oshizushi (pressed sushi) from Osaka, made by layering mackerel over vinegared rice and pressing it into shape.
Usually, this kind of sushi uses mackerel cured with sugar, salt, and vinegar, but what sets this one apart is that it uses fresh raw mackerel. It has no off notes at all, and you can also enjoy the flavor of shiso leaves, making it very delicious.

A total of 8 pieces, including chutoro (medium fatty tuna) and uni (sea urchin). The shari (sushi rice) is small, so you can keep eating piece after piece. I also ordered ikura (salmon roe) and shinko-maki (pickled radish roll) as extras. The shinko-maki was amazingly good! Also, the murasaki (soy sauce) was incredibly tasty. So this is Kyushu soy sauce〜, and it made me want to buy some as a souvenir.

By the way, the ingredients here are the same as at the Honten, and the hongaeshi (traditional hand turning technique) passed down from the master was beautiful to watch, giving the sushi an elegant shape. While showing off traditional skills carried on for 200 years and sometimes explaining things with a tablet, the restaurant never felt stiff and was a very relaxing place.

I’ve been here several times already, and it’s an easy, casual place to visit when I’m in the mood for sashimi or a little sushi. Of course, the owner’s personality is part of the appeal, but the reasonable prices are also one reason it’s so easy to stop by. Teruzushi serves sushi made with Special ingredients and top level skill. It is on the third floor of a building along Tenraiji-dori in Tobata-ku, Kitakyushu, about 8 minutes by taxi from Tobata Station.
This by reservation only restaurant has 10 counter seats in total, arranged like a stage in a semicircle around the sushi counter. Because it is so popular, booking early is recommended.

One reason for its popularity is the chance to enjoy flashy performances like a kaitai show (fish cutting show). It is said to offer a high level of entertainment.
For the toppings, they use seafood sourced through their own channels, with outstanding freshness and quality. For the shari (sushi rice), they use vinegar aged for 3 years, creating each piece to bring out the best in the ingredients.

I think being able to source this many ingredients is thanks to the network the taisho (head sushi chef) has built up over the years. The nigiri included horse mackerel, Spear Squid topped with sea urchin, medium fatty tuna, lightly seared nodoguro (blackthroat seaperch) wrapped in nori, butterfly saba (mackerel) (battera), kurumaebi (Japanese tiger prawn), simmered hamaguri (hard clam), extra fatty tuna, whiting, jasmine tea, miso soup, shinko (young gizzard shad), kanpyo-maki (dried gourd roll), and tamagoyaki (Japanese omelet). Every single one was amazingly good.

Teruzushi 2ndedition is on the second floor of a building along Tenraiji-dori in Tobata-ku, Kitakyushu. Here you can enjoy sushi prepared by an apprentice from the well-known Teruzushi on the third floor of the same building.
The interior is a refined Japanese-style space, and it is by reservation only, with 9 counter seats in total and 1 Private room that can accommodate 6 people.

Using seafood Specially selected from the coastal waters off Kitakyushu and from around Japan, the restaurant serves high level neta (sushi toppings) on par with its Honten. They prepare each item with care and turn it into a top class dish.
Like its Honten, which is known for its strong entertainment value, you can enjoy the performance as well as authentic and excellent sushi.

They offer several kinds of Omakase courses, as well as courses with All you can drink. If you want to enjoy sushi casually, lunch is a great choice.
You can enjoy the most popular "[Lunch Only] Omakase." This course includes 9 pieces of seasonal sushi made with the best seafood of the day, tamago (Japanese omelet), and soup.

I visited on a Private reservation and asked for a Special menu. We had the course on the second floor, and everyone was very satisfied. The sushi was good, and we also enjoyed every a la carte dish. It is in a slightly inconvenient location, but they also serve lunch, so please stop by at least once. I also recommend it when you just want to eat sushi.

This is the second-floor counter operated by Teruzushi, which has made a name for itself around the world, to help train young chefs. When people think of Teruzushi, the performance tends to draw more attention than the sushi itself, but once you eat the sushi made with its one-of-a-kind shari (sushi rice) and top-quality neta (toppings), you realize once again that this is, after all, a first-rate sushi restaurant.

Recommended sushi in Kitakyushu City's Moji area

Sushi-dokoro Mitsumoto is located along Kyuu Osaka Shosen Dori, a 1-minute walk from Mojiko Station. You can casually enjoy sushi while taking in the beautiful view of the Kanmon Kaikyo (Kanmon Strait), which separates Kyushu and Honshu.
The interior is a calm Japanese-style space, with counter seats, table seats, and Sunken kotatsu seating that can also be used as a Private room.

The sushi uses very fresh seafood caught in nearby waters. Each piece of neta (sushi topping) is large and satisfying, and tastes great.
The photo shows the slightly indulgent "Omakase nigiri (chef's choice hand formed sushi)." The contents vary by day, but it is an assortment that lets you enjoy the day's recommended sushi.

You can also enjoy sushi with the "Take Course" and "Ume Course," which also include a la carte dishes made with seafood.
At lunch, they offer a wide selection of Rice bowls topped with plenty of seafood. The photo shows the popular "Special Kaisendon (seafood rice bowl) Set." It also comes with chawanmushi (savory egg custard) made by steaming ingredients mixed into an egg mixture with dashi, an onsen tamago (soft-cooked egg), and soup.

At the counter, I had the chef’s recommended sashimi, an à la carte appetizer, and Omakase nigiri, along with recommended local sake such as Sarukui and Tenshin. Not a single item missed the mark, and I fully enjoyed every dish and every piece of nigiri. I definitely want to come back the next time I visit Kitakyushu.

肉より魚が好き
I ate the seafood Rice bowl topped with a soft-boiled egg. It came with ji-uni (local sea urchin), so I enjoyed the sea urchin first before mixing everything together. The nigiri was also carefully made and delicious. If you are staying in Mojiko (Moji Port), definitely give it a try.
