There are many sushi restaurants around Kyobashi Station that are known as standout spots. One of them, Sushi Yuu, is by reservation only and starts all guests at the same time for both lunch and dinner.
At the counter seats, you can enjoy your meal while watching the chef's skilled work up close.
Photograph:森の茸
There are two types of seating: the main counter where the taisho (head sushi chef) prepares the sushi, and a separate counter.
Both offer Omakase made with carefully selected fresh seafood. The chefs' lively conversation and performance are also part of the appeal.

For the sushi toppings that go on top of the vinegared rice, they use quality fish from different regions and seasonal ingredients.
They also adjust the texture and temperature of the shari (vinegared rice), and the sushi is well regarded for its balanced pairing with the toppings.

Each piece of nigiri (hand-formed sushi) is truly wonderful. Not just the topping, but the texture and temperature of the shari (sushi rice) are also excellent and really lift your mood. The portions are large, so it leaves you with a strong sense of Manzoku.

ta!
The course prepared by the taisho (head chef), who has also drawn attention through TV appearances, was truly a blend of entertainment and authentic skill. The trademarked purin-maki (custard pudding roll), which could be called this restaurant’s signature dish, is a one-of-a-kind item where the rich sweetness of egg and the shari (sushi rice) melt in your mouth, giving an experience that goes far beyond expectations.

You can enjoy pairings of sushi and small dishes with Japanese sake and wine.
The combinations bring out the best in both, making the food and drinks go down easy. The pairing comes in 3-glass or 5-glass plans, and they also accept On-the-Day orders.

• Chutoro (medium fatty tuna)
It has melt-in-your-mouth fat, yet the finish is clean. It is not too rich, and its refined umami lingers on the palate. The rice and the temperature of the nigiri are also spot on, showing the chef’s skill.

For the sushi rice, they use hibernated Hitomebore rice grown with organic farming.
The rice is cooked in a Clay Pot from Shigaraki Kumoi Gama (a famous kiln in Shiga Prefecture). Paired with Special vinegar, it becomes sushi rice that works in harmony with the toppings.

In the convenient Yaesu area, you can enjoy authentic Edomae-zushi (traditional Edo-style sushi). The toppings are all first-rate, with a high standard of both freshness and quality. The carefully made nigiri that brings out the best in each ingredient leaves a strong impression. I visited with a friend as a year end treat for ourselves. The sushi was really delicious! Each piece was seasoned to match the fish, and it melted in my mouth,, I also think the rice was cooked in an exquisite way to pair well with the fish. At the counter, I ordered the Omakase. The taisho (head chef) was very friendly, attentive to us, and shared fun conversation, so the hospitality was excellent. For tuna, you can enjoy chutoro (medium fatty tuna, a cut with a good balance of lean meat and fat) and akami (lean tuna), as well as the house specialty, ohagi.

I visited Tsukiji Aozora Sandaime Marunouchi Ten, where you can always enjoy sushi that leaves you in Daimanzoku. The appetizers at the start were tasty, followed by a sparkling and beautiful lineup of nigiri (hand-pressed sushi)! Made with aka-zu (red vinegar), each grain of rice stands out, and the shari (sushi rice) is on the firm side. This shari pairs perfectly with maguro (tuna), and in your mouth, the tang of the rice and the sweet richness of the tuna fat melt together for a great bite. I also ordered the ohagi (tuna negitoro and takuan), which they say is their specialty, and it melted in my mouth and tasted great.

The sushi lineup uses fresh seafood, including carefully selected Fujita maguro (Fujita Suisan tuna).
The lean tuna has a rich, full flavor, while the chutoro is said to be excellent, with just the right amount of fat that melts in your mouth. Some customers even add extra tuna to their course because it is so good.

This is Fujita maguro (tuna). The lean cut was moist, with a full, clear flavor. Of the two kinds of chutoro (medium fatty tuna), the back cut was slightly firmer and more muscular in texture but still tender with good flavor, while the belly cut was soft and a bit richer in fat, yet melted in the mouth without feeling heavy.

All of the sushi was fresh and delicious, but the one that stood out most was kama-toro (fatty collar tuna). It melted in my mouth the moment I took a bite, and I was honestly moved. The five-piece tuna set was also great because I could enjoy the differences between each cut and compare them side by side. The shima-aji (striped jack) and natural buri (wild yellowtail) were nicely rich, and the nama uni (fresh sea urchin) had no off notes and a refined flavor.

I reserved the Edomae-nigiri (Tokyo-style hand-formed sushi) tasting course. I went up to the second floor, where each piece of sushi was served one by one at the counter. The full course included 20 items: 17 pieces of nigiri, 1 roll, chawanmushi (savory egg custard), and a bowl of soup. The fish had a nice thickness to it, letting me really taste its flavor. The chawanmushi and soup were piping hot, and the warmth sank right into my stomach. It was a moment that really reminded me how good sushi can be.

Sushidokoro Ginza Fukusuke Honten is in a great location, just a 5-minute walk from Kyobashi Station, and serves authentic Edomae-zushi (Edo-style sushi) made by skilled chefs.

This restaurant has a long history, having been founded in 1960. As it is directly operated by a fresh fish wholesaler, it offers fresh, high quality sushi.
In addition to A la carte sushi, which you can choose from more than 50 varieties at all times, you can also order set meals and courses.

The popular sushi topping chutoro (medium fatty tuna) is a premium wild Indo-maguro (Indian tuna). It has a fairly rich fat content and a melt-in-your-mouth texture.
On the sushi menu, they also highly recommend Ume-madai (brand farmed Sea Bream), a branded farm-raised Sea Bream from Kushimoto, Wakayama Prefecture.

I had a sushi lunch at Fukusuke again for the first time in a while. The toppings were very fresh, and the shiromi (white fish) and chutoro (medium fatty tuna) were especially good. The sushi rice was slightly small and easy to eat, and the overall balance was great too. The calm interior had an atmosphere where even solo diners could relax and take their time. Even the miso soup was properly tasty, so the overall Manzoku level was high.

The rice in the sushi is finely textured, has a clean finish, and melts pleasantly in the mouth, which really brings out the toppings. Delicious.

Near Kyobashi Station, Nihonbashi Sushi Tetsu Honten serves traditional Edomae-zushi (Edo-style sushi) with a history dating back to 1866.
There are two types of seating in total, counter and table seating, so it works well for everyone from solo diners to groups.
The seafood that the head chef personally sources at the market is very fresh and high quality.
The shari (sushi rice) has its own distinct character, with the sweetness kept in check by adjusting the salt. This brings out the umami of the seafood and results in delicious sushi.

The restaurant's recommendations are ni-anago (simmered conger eel) and kohada (gizzard shad). These menu items are said to be traditional Edomae-zushi (Tokyo-style sushi) toppings.
Before refrigeration technology existed, people improved their shelf life through various methods, and they were also caught in abundance in Tokyo Bay (Edomae).

I ate at the counter, and the taisho (head chef) was fun to talk to, and the sushi was also delicious. The Japanese sake was good too, and I had a great time.

I enjoyed the upper nigiri at Nihonbashi Sushi Tetsu. The skilled chefs shape each piece of sushi with great care, using Special fresh seafood and shari (sushi rice) with a nice balance of acidity and a soft texture. The flavors made for a luxurious moment that stayed with me. In the calm interior, you can spend a blissful time savoring it to your heart's content.

Umai Sushikan is a sushi chain with locations in the Tohoku region and across Tokyo.
At Umai Sushikan Ginza Honten near Kyobashi Station, you can enjoy sushi made by skilled chefs at a bright, clean counter or in a Private room.

They use fresh seafood delivered directly from Toyosu Market for the sushi toppings. Guests enjoy both the seasonal recommendations and sushi with creative twists.
For courses, the popular Keyaki course includes 9 dishes in total, including sushi as well as sashimi and grilled items.

The shari (sushi rice) uses akazu (reddish-brown vinegar made from sake lees), which is said to have a mellow acidity that pairs well with the flavor of the seafood.
The plates use Ogatsu Suzuri (Ogatsu inkstone). This traditional craft from the Ogatsu area of Miyagi Prefecture brings out the beauty of the sushi even more.
Every piece of sushi was very good! I used a Private room, and both the dining area and the Private room felt clean, so I could enjoy my meal in a very relaxed setting. In addition to the course, I could also order extra pieces I liked, so I got to eat everything I wanted and was completely Manzoku. I would definitely like to visit again.

The shari (seasoned sushi rice) is already flavored, and the quality of the toppings is excellent. The tuna toro (fatty tuna), sukimi (scraped tuna), and hikarimono (silver skinned fish) were especially great. This is a sushi restaurant I definitely want to visit again.

Beyond the door is a refined hinoki (Japanese cypress) counter. You can watch the chefs handle their knives and prepare the food, which makes it a visual treat as well.
Ginza Sushi Nakamoto is also appealing for the dignified atmosphere of a high-end sushi restaurant.
The tuna is sourced from a trusted seafood wholesaler.
At times, they serve premium ingredients carefully selected from around Japan, such as kuro-awabi (black abalone) and nama uni (fresh sea urchin). The toppings in the course include seasonal items and are left to the chef’s Omakase.

For the sushi rice, they use rare organically grown Mutsunishiki, a rice variety developed specifically for sushi.
It is known for the distinct texture of each grain and its gentle sweetness. The vinegar paired with the rice is also chosen to match the topping, with white vinegar and red vinegar used depending on the neta (sushi topping).

Every piece of nigiri made with the skill of a master with more than 35 years of sushi experience and the rare sushi rice mutsunishiki (a premium rice for sushi) is outstanding. Paired with the refined and calm atmosphere of the restaurant, it made for a luxurious and blissful time.

Throughout the meal, each piece brought out the best in its ingredients and was prepared with great care. It was exactly the kind of experience that fits the saying, “When something is made deliciously, it naturally becomes beautiful.” It was a moment that let us fully enjoy the real pleasure of eating sushi in Ginza.

I also asked them to choose the Japanese sake with Omakase, and their picks really brought out the sushi, so I ended up drinking a bit too much from lunchtime. This is a place I’d love to come back to at night!

The interior, with its eye-catching counter made from a single slab of hinoki (Japanese cypress), has a luxurious feel while still being comfortable.
Ryohei Zushi is a restaurant serving authentic Edomae-zushi (Tokyo-style sushi). The owner has spent more than 45 years mastering sushi, including training at well-known restaurants.

Served as part of the course are sushi and a la carte dishes made with seafood sourced from Toyosu Shijo (Toyosu Market) and seasonal ingredients.
The kuruma ebi (Japanese tiger prawn) used for the sushi is satisfyingly large, and the akagai (ark shell clam) is said to have a nice aroma and texture.

The shari (sushi rice) showcases polished craftsmanship, and together with the high quality seafood, each piece is shaped to loosen gently in the mouth.
In addition, the Japanese sake selected by a Japanese sake sommelier comes highly recommended. They offer a tasting set of three kinds of Japanese sake as well as premium labels.

Along with classic Edomae-zushi (Tokyo-style sushi) toppings, you can also enjoy fresh seasonal toppings. It is a lot of fun to hear the owner and head chef talk in detail about the sushi toppings. The seafood is said to come from the same suppliers as other famous sushi restaurants in Ginza. You can enjoy high-end sushi in a casual atmosphere and relax, which makes it really comfortable.

After having chutoro (medium fatty tuna), otoro (fatty tuna), lean tuna, squid, Nakaochi, shiromi (white fish), hikari-mono (silver-skinned fish), and uni (sea urchin). Every topping was high quality and delicious no matter what I ate. The chutoro in particular stood out for its sweetness and rich fat. The uni also filled my mouth with the aroma of the sea, followed by uni's unique sweetness, making it excellent
