As you keep chewing, the neta (topping) and shari (sushi rice) loosen at the same time, and the flavor fades away naturally. What stood out most was how quiet the finish was. After eating, what stayed on the tongue was neither fat nor vinegar, but only the feeling that you had eaten properly prepared fish. Each piece was seasoned with carefully chosen soy sauce, salt, and other flavors, so adding extra soy sauce would be nonsense. I booked a course meal ➕ an All you can drink course! The sushi was also delicious, and the All you can drink course included about 10 kinds of Japanese sake, from sweet to dry, all of which were very good. It was also nice to try them with explanations from the staff. I’ll definitely visit again.

I visited this place while looking for a sushi restaurant in Shinbashi. Among the lineup of fresh neta (sushi toppings), the saba (mackerel) was especially outstanding, with rich fat and great flavor. You could really feel the chef’s careful work, and the pairing with Japanese sake was excellent, with each piece offering something new to discover. With its calm atmosphere where you can take your time and enjoy the meal, this is a place I’d like to visit again.

They offer a wide lineup of easy-to-order sushi set menus. All of them come with miso soup and salad.
They prepare the sushi in traditional Edomae-style ways such as yubiki (parboiling), aburi (searing), and zuke (soy-marinating), bringing out the best umami in each ingredient with methods suited to it.
The most popular item is the “Saikyo Tennen Hon-maguro Set (Ultimate Wild Bluefin Tuna Set).” It is a tuna filled set that tuna lovers will not be able to resist.
It is said to be nice that it also includes otoro (fatty tuna belly), the most luxurious cut, and chutoro, which has an excellent balance of fat and lean meat. You can enjoy the differences in flavor depending on the cut.

The toppings are pretty big, so the meal feels very satisfying. I dug into everything from hikari-mono (silver skinned fish) to tuna and shrimp. The kani chawanmushi (savory steamed egg custard with crab) was large and filling, with a nice hearty feel. The dashi broth came through well and tasted great. I ate quite a lot and had some drinks too. It was good.

The Sushi Andaz Tokyo is a luxury sushi restaurant located on the 52nd floor of Toranomon Hills, attached to a rooftop bar.
This Special space has counter seating only, where sushi chefs prepare the sushi right in front of you.
Another reason for its popularity is that guests can talk with the chefs and deepen their understanding of sushi.
They place top priority on freshness and a sense of the season, carefully selecting ingredients and applying traditional Edomae (Tokyo-style sushi) craftsmanship.
Dinner is served in two seatings, and they offer only an Omakase course. The quality of the neta (sushi toppings) is top class, and the careful knife work lets you really enjoy the natural texture of each ingredient.

We were able to enjoy great sushi while chatting with the taisho (head sushi chef). What left the biggest impression on us were otoro (fatty tuna), chutoro (medium fatty tuna), uni (sea urchin), lightly seared nodoguro (blackthroat seaperch), and anago (conger eel). They also had salmon on the menu, which is not especially unusual these days, and the salmon was tasty too. There is also a rooftop bar on the same floor, so after the meal you can enjoy drinks at the bar without having to move to another place.

With only 8 seats, this is a special space and truly a hideaway for adults, so it feels like a place you would be proud to know. I had the Omakase course with 3 kobachi (small appetizer dishes), 3 kinds of sashimi, 10 pieces of nigiri sushi, a makimono (rolled sushi), aka-dashi (red miso soup), and dessert, and the ingredients, skill, and hospitality were all top class.

The interior is small and just the right size for solo diners. They had something like a Quick Drink set, so I chose that. From the day's recommendations, the anago (conger eel) shirani (gently simmered) eaten with salt was incredibly delicious.
