Toyozushi, located on the second floor of a building a 2-minute walk from the west exit of JR Omiya Station, is a sushi restaurant that uses its own aging techniques to bring out the full flavor of its seafood toppings.
There are 36 seats in total, including Private room and Semi-private room seating, as well as counter seats that give the place the feel of a classic sushi restaurant.

As for white fish, it is flown in directly from the Goto Islands in Nagasaki Prefecture, Kyushu. It is prepared using kaichu hoketsu shinkeijime (a high-skill method of bleeding and nerve tightening in seawater).
To match the seafood toppings, they use akazu (red vinegar) and shirozu (white vinegar) separately. Hon-wasabi (true wasabi) is said to be delivered from a contracted farm in Shizuoka Prefecture to Saitama Prefecture.
Each of the counter seats and table seats has its own Omakase course, pairing à la carte dishes with nigiri sushi.
An okonomi nigiri (custom nigiri) style is also available, so it is a good idea to order premium ingredients like uni (sea urchin) or otoro (fatty tuna) exactly as you like.

The food was delicious. The portions were solid too, and I left feeling Manzoku. The katsuo (bonito), aji (horse mackerel), and uni (sea urchin) were especially good. The restaurant also has zashiki (tatami seating), and it felt like a fairly large place with plenty of seats. With its casual, down to earth atmosphere, I think this is a great spot to enjoy tasty sushi without any pretension.

Azuma Zushi Honten, just a 1-minute walk from the east exit of JR Omiya Station, is a traditional Japanese sushi restaurant that stays true to its roots, including cooking its shari (sushi rice) in a classic kama (iron pot).

The shari (sushi rice) seems to be popular, cooked up fluffy in a kama (traditional pot) using reduced-pesticide rice, and you can feel their care in the ingredients, from natural sea salt to naturally brewed soy sauce.
The photo shows a set menu called “Kochou,” and the anago nigiri (conger eel sushi), whose flavor has been kept the same since the restaurant first opened, stands out the most.

No matter how you look at it, it’s a room in an apartment. I pressed the intercom, said I had a reservation, and turned the doorknob. Oh. The interior is really beautiful lol. The chopsticks and oshibori (wet hand towel) have the restaurant’s name on them and feel very refined.

What stood out most were the chutoro (medium fatty tuna), anago (conger eel), and Kuroge Wagyu nigiri. The Luxury Course comes with smaller pieces of shari (sushi rice), and you can get all you can eat uni and Kuroge Wagyu nigiri as well. It also includes all you can drink, and since each piece is a more manageable size than usual, the two of us were able to enjoy 10 drinks and about 50 pieces of sushi.

It is said to be a great place to enjoy a wide range of nigiri sushi made with fresh seafood toppings. They are particular about not buying fish unless the market has fish good enough to satisfy them.
As for the restaurant’s specially selected rice, they keep it refrigerated as brown rice, then have only the amount they need slowly milled and sent to Saitama Prefecture.

Uni (sea urchin) was rich and sweet, with just the right level of saltiness, and the aroma of the nori (seaweed) was a perfect match. The clear soup made by simmering hamaguri (hard clam) had a clean taste. Anago (conger eel) was melt-in-your-mouth tender. It melted in my mouth. It was delicious. The tamago (Japanese omelet) had just the right sweetness and a simple flavor.

Every topping was very fresh, and both the Rice bowl menu items and the nigiri were already seasoned with soy sauce. Both the kaisen chirashi (scattered seafood Rice bowl) with its lineup of premium toppings and the maguro-zukushi-don (all-tuna Rice bowl) were top class in taste, and the marinated tuna in particular was outstanding. The staff were cheerful, and the restaurant had a nice atmosphere.

As the restaurant’s signature shime saba, it has an ideal level of curing and brings out the rich flavor of mackerel in a way raw fish cannot. Next is mushi ebi (steamed shrimp). The chawanmushi (savory steamed egg custard) had seasoned shiitake mushrooms, candied chestnuts, and shrimp in it, and it was very delicious. The owner was cheerful, and the okami-san (proprietress) had a gentle warmth about her that gave the place a nice feel, which made me want to come back again. I really enjoyed the meal!
