Edo-gokoro Yamaboshi is popular for letting guests enjoy authentic Edomae-zushi (traditional Edo-style sushi), and the restaurant is located on the 3rd floor of Planet Building, a 5-minute walk from Tenjin-Minami Station.
Inside, the vermilion and black color scheme leaves a strong impression, and the space has counter seats and Sunken kotatsu seating, creating a calm atmosphere.
Photograph:元アイドルの食べある記
The menu consists only of the 17-item Omakase course. It includes 12 pieces of Edomae-zushi (Tokyo-style sushi) made with toppings sourced that day.
For tuna, they serve two pieces: lean akami (lean tuna) and chutoro (medium fatty tuna). The flesh is fine-grained, with delicate fat, and it is said to have a nice texture and flavor.
Photograph:ibis_
The awabi (abalone) salt steamed abalone is surprisingly thick. It is said to be a one of a kind dish that only a handful of people in Japan can make.
By dipping it in water at 60-70℃ with a salt concentration slightly higher than seawater, they bring out its springy texture and rich flavor.
momocarry
Including the chef’s dedicated skill and constant refinement, along with the proprietress’s warm charm, there were so many dishes here that felt truly worth it. The timing for serving items like awabi (abalone) that had lived for over 60 years was also spot on. This is a sushi restaurant that will make you want to come back again.

Everything was delicious from start to finish. Every piece of sushi had a depth, delicacy, and careful craftsmanship that I had rarely experienced elsewhere, and I was very satisfied. I definitely think this is a famous restaurant.

Sushi-dokoro Nishi no Kakure, a 5-minute walk from Tenjin-minami Station, is a well-regarded restaurant where you can enjoy sushi made with fish from Hakata in a Japanese-modern interior.

They use three kinds of vinegar for the shari (sushi rice). The chef uses fresh neta (sushi toppings) bought that day at Fukuoka Nagahama Ichiba (Fukuoka Nagahama Market).
The uni (sea urchin) is kept at the ideal temperature, giving it a rich taste. Reviews also say that every nigiri melts in your mouth and tastes great.
Photograph:ぱるたまは食いしん坊
The menu offers Omakase courses only, and they will also cut the food in advance if it is hard to eat. In addition to nigiri, they also put care into the otsumami (small dishes to enjoy with drinks).
The gari (pickled ginger) uses seasonal vegetables, so reviews say it changes every time, which feels fresh and is a nice touch.
yohar55
The kue (longtooth grouper) sashimi comes with 100-million-year-old rock salt, the skin side is lightly seared, and dishes include satoimo (taro) topped with karasumi (dried mullet roe). The mildly seasoned red vinegar rice works well, there is a clear focus on tuna, and both the lean cut and chutoro (medium fatty tuna) are glossy and delicious. The tamago is served as a roll, and even the gari is renkon (lotus root), which adds a twist. The wine list is extensive, and for Japanese sake, just ask and they will bring out various options.

It was my first time mixing maguro no noten (tuna head meat) with narazuke (sake lees pickles), and it felt fresh and new. The shari (seasoned sushi rice), prepared from the start to bring out the topping, was delicious. The softly lingering notes of wasabi and yuzu kosho (yuzu chili paste) also play a great supporting role in the overall flavor. I never imagined kanpyo-maki (dried gourd roll) could taste this good... It really shows the skill of the chef. The uni (sea urchin), especially, was managed at the perfect temperature and served at peak condition.

There are only three types of Omakase courses on the menu. The "Gokujo Omakase Nigiri Course" comes with 8 pieces of nigiri.
The otoro (fatty tuna) from hon-maguro (bluefin tuna) is said to be outstanding. It is rich with fat, giving it a full flavor, and it seems to melt in your mouth.
At lunchtime as well, they offer an Omakase nigiri course that adds a la carte dishes to the nigiri.
For the shari (sushi rice), they blend two kinds of akazu (red vinegar), giving it a mild taste with good depth. It is also nice that the toppings change with the seasons.

In the calm atmosphere, it felt Special to watch the chefs' careful work up close. Still, it was not too formal, and we enjoyed it with a nice sense of ease. The first chutoro (medium fatty tuna), Sea Bream, and aji (horse mackerel) all had outstanding freshness, and the balance with the shari (sushi rice) was excellent. The otsumami (small appetizer) uni-ika (sea urchin and squid) was rich yet clean-tasting, and it paired perfectly with drinks.

The smooth, melt-in-your-mouth texture of the Edomae-zushi (Tokyo-style sushi) was outstanding. The chef carefully explained the fish and more, which made it taste even better! The way he shaped the sushi flowed so smoothly, and it was beautiful to watch. The staff also served us with warm smiles, and I’d love to visit again.

The Matsumae sushi, made by wrapping mackerel stick sushi with Matsumae kombu kelp from Hokkaido, has earned rave reviews saying it is among the best in Fukuoka.

The 13 pieces are even more impressive than I expected!!!It doesn’t include toro (fatty tuna) or anything like that, but you can tell just by looking that they serve fresh local fish, and every topping has a really nice firm bite and tastes great. And for someone like me who came in starving, I was happy to see that the shari (sushi rice) portions are on the larger side! Pure joy!!!!

Sushi Senpachi is a sushi restaurant by reservation only, located a 12-minute walk from Yakuin Station. The owner was born into a family of sushi chefs spanning four generations, and after training at well-known restaurants in Fukuoka and Tokyo, went on to open the restaurant independently.

The slightly more vinegared shari (sushi rice) paired very well with the sticky, sweet Aori-ika (bigfin reef squid) that had been aged for 10 days and chopped with a knife, while sasaika also had a different kind of appeal, making it irresistible for squid lovers.

They serve sushi made with plenty of ingredients from Kyushu (Japan’s southwestern main island) in an Omakase course.
The toppings are fresh and generously sized, so they are very satisfying to eat. The moment you put them in your mouth, they are said to melt with great flavor.

You can also order an Omakase course at lunchtime. The nigiri comes with 10〜12 pieces.
The akazu (red vinegar) rice has just the right balance of acidity and saltiness, and pairs perfectly with the toppings. The ikura (salmon roe) gunkan is said to be so good that even the nori (seaweed) tastes wonderfully toasty.

The main production regions for the ingredients are across Kyushu. They perfectly finish fresh ingredients with cooking methods that suit each one, such as pickling and charcoal grilling. Sushi Kappo Kuroshio, about a 1-minute walk from the Yakuin 2-chome bus stop, is a well-reviewed restaurant where you can fully enjoy natural hon-maguro (Pacific bluefin tuna) delivered direct from a tuna wholesaler, along with live fish.

Washoku to Sushi Takumi no Dojo is about a 1-minute walk from Nakasu-Kawabata Station, and serves washoku (Japanese cuisine) made with seasonal ingredients along with authentic sushi.
The carefully designed space features an elegant counter adorned with seasonal byobu (folding screens).
The sushi rice is about half the usual size, so it is designed to let you enjoy small portions of the many other dishes on offer as well.
The sushi is served at a pace that matches how quickly you eat, so the meal goes smoothly with no waiting time. The anago (conger eel) is said to be thick and delicious.

At lunchtime, they serve a nigiri-zushi (hand-formed sushi) set.
The nigiri-zushi comes pre-seasoned, so you can eat it without dipping it in soy sauce. The red vinegar rice and fresh toppings are said to come together beautifully in the mouth and taste great.

I just reserved the seats and planned to decide what to order after arriving, but all the courses were quite generous for the price, so we ordered a bunch of mainly à la carte dishes instead, and everything was delicious.

Every dish was hearty, and I was very satisfied. The live ika (squid) was served one per person, and a nice touch was being able to choose the ato-zukuri (second preparation) from four options: grilled, tempura, sashimi, or curry. I chose the grilled option, and the nice aroma was just right and tasted great. They also served about 10 kinds of sushi, and the nodoguro (blackthroat seaperch) in particular was rich and excellent.

They serve meals in an improvised course style tailored to your mood that day. Reservations are required by the day before.
The kitamurasakiuni (northern sea urchin) in its shell comes with ikura (salmon roe). It has a fresh taste and is said to be an irresistible dish for sea urchin lovers.

It is said that the attention to detail shows not only in the sushi, but also in the appetizers, the sake, the tableware, and even the location.
People say it is fresh and delicious to enjoy the toppings in a way that brings out their quality as much as possible, using ao-togarashi (green chili pepper) yakumi (condiment) instead of soy sauce.

The chef's service is warm, and every nigiri (hand-formed sushi) and dish is delicious! It's also great that they don't do a simultaneous start for the course! If you stagger your time, you can also talk with the chef at a relaxed pace.

Located on the third floor of a stylish building by the river, it has chic counter seats with a view of the river. The nigiri sushi is delicious, and the a la carte dishes are great too. They even bring out uni (sea urchin) in the shell right from the start, which really gets you excited!

Recommended sushi restaurants in the Hakata area of Fukuoka City, Fukuoka Prefecture

Hakata Sushi Momonoki, just a 1-minute walk from Hakata Station Chikushi Exit, is well known for nigiri made by chefs who trained at famous restaurants and for tasty a la carte dishes that reflect the four seasons.
Guests can enjoy a relaxed meal in a calm Private room or at the counter seats.
The Most Popular "Omakase (Premium)" is a lunch time only menu. It offers a well balanced way to enjoy nigiri and otsumami (small dishes).
Reviews say every topping is very fresh, blends perfectly with the shari (sushi rice), and really shows the chef's skill.

They also offer a course where you can enjoy nigiri and Chinese cuisine.
The small Rice bowl of bafun uni (short-spined sea urchin) and ikura (salmon roe) from Hokkaido is especially memorable. Instead of serving it as gunkan-maki, they present it in a small bowl, which shows a nice touch of creativity.

This high quality spot lets you fully sink into sushi mode even at lunch. The toppings are high in quality and freshness, and the balance with the shari (sushi rice) is also very good. The aori-ika (bigfin reef squid) and chutoro (medium fatty tuna) are especially memorable. You can really feel the quality of the ingredients and the careful work, so it is a great pick for a reward lunch during a break from work or for dining with someone important.

Maybe because it was midday on the weekend, the restaurant was almost full✨A humorous itamae (sushi chef) took care of us, and we spent a relaxed afternoon enjoying each piece of sushi. The sushi was of course delicious, but the ramen served in this soup bowl as the second course was outstanding. The golden chicken broth was amazing.

Sushi Seimatsu, on the second floor of a building a 5-minute walk from Hakata Station, is a popular restaurant where you can enjoy beautiful dishes made with the head chef’s Special ingredients and authentic Edomae-zushi (Edo-style sushi).
The interior has a crisp, refined atmosphere, with counter seating and a Private room.
Photograph:へはさや
They offer a course that combines authentic Edomae-zushi (traditional Tokyo-style sushi) with a selection of a la carte dishes.
The sushi, shaped piece by piece by the head chef right in front of you, is said to be true edible art. The shari (sushi rice) gently loosens in the mouth, while the aroma of akazu (red vinegar) and the rich flavor of the rice stand out, bringing out the character of each topping.
Photograph:shin_tokyo
As lunch-only options, you can also order a nigiri set or an Omakase course.
The sushi comes already seasoned, so soy sauce is not needed. The shari (sushi rice) is small, and together with the rich flavor of the aged toppings, the taste slowly spreads across your palate.

Not just the nigiri (hand-formed sushi), but also the otoshi (small appetizer), grilled dishes, soup, and dessert were all great, with both taste and volume leaving me completely Manzoku. The taisho (head chef) also had a real gift for conversation, keeping a good pace, and he instantly noticed that I was left-handed, showing first-rate care in details like where to place the gari (pickled ginger) and which direction to set down the nigiri. I was able to fully enjoy the appeal of fish caught in Genkai-nada (the Genkai Sea) and nearby waters in each season.

The Private room had a calm and pleasant atmosphere, and the staff served us with care, even checking which foods the children did not like, so we could enjoy our meal in comfort. Every dish was delicious, and the sushi was outstanding.

They also offer courses that come with seasonal nigiri sushi and a la carte dishes, plus All you can drink.
The Appetizers are carefully prepared one by one, and every dish is said to be delicious. The ankimo (monkfish liver) has a Creamy melt-in-your-mouth texture and a rich taste that goes well with drinks.
赤ちゃんらいおん
The ika (squid) nigiri and ebi (shrimp) nigiri were both very delicious. The squid was aged, which gave it a different kind of appeal from ikizukuri (prepared while still alive), with a smooth texture, more sweetness, and concentrated umami.
