Kyoto Sushi no Kura

Kyoto Sushi no Kura is a sushi restaurant about a 12-minute walk from Kyoto-Kawaramachi Station on the Hankyu Kyoto Main Line. It is the first Kyoto restaurant from Sushi no Kura, a famous hard-to-book restaurant in Hokkaido.

Guests can relax and enjoy their meal at the single-piece counter made from Kiso hinoki (Japanese cypress).

The sushi toppings use Special ingredients sourced mainly from nearby Awaji and from around Japan.

A major highlight is the Kyoto location’s exclusive akazu (red vinegar) sushi rice. Its gentle tang brings out the good flavor of the toppings and creates an excellent harmony.

The Omakase course features nigiri sushi and maki sushi made with seasonal seafood. The balance of fresh toppings and shari (sushi rice) is said to be so good that even serious sushi lovers are impressed.

Besides sushi, you can also enjoy otsumami (small dishes to go with drinks) made with unique ideas.

The restaurant was also in Gion (Kyoto’s historic entertainment district), a stylish area! The sushi also used akazu (red vinegar), and the taisho (head chef) was friendly, so I had a great time. I’d like to go again when I visit Kyoto☺︎

The sushi rice was seasoned with akazu (red vinegar), and it had just the right balance without being too sweet. I was surprised that the first piece was aburi (seared) otoro (fatty tuna), but both the topping and the searing were excellent, concentrating the rich umami and sweetness of the otoro(^q^)The akami (lean tuna) was excellent too☆

Sushi. The shari (sushi rice) here uses akazu (red vinegar), and the rice comes from a well-known rice shop near Yasaka Jinja (Yasaka Shrine). Along with simple sushi that lets the ingredients shine, they also serve creative sushi made with passion fruit, so there are lots of touches that keep things interesting! Even the zuke (marinated fish) uses karashi (mustard) instead of wasabi, which made it fun to try all kinds of different flavors.

・shiroebi (glass shrimp) topped with uni (sea urchin)
They say shiroebi are very small, so they carefully removed the shells so nothing would remain in the mouth, then finely chopped them with a knife for a very smooth texture! It paired well with the uni, and the sweetness was great!

Every piece of sushi was fresh and full of flavor. We chose counter seats this time, and we were able to relax and enjoy the meal while chatting with the itamae (sushi chef). The chawanmushi (savory egg custard) also had a gentle dashi (soup stock) flavor and was very good.

Sushi Morigaku

Sushi Morigaku is a sushi restaurant located a 3-minute walk from Kyoto Shiyakusho-mae Station on the Kyoto Municipal Subway Tozai Line.

The machiya-style interior with a black color scheme has the feel of a bar. At the upscale counter, guests can enjoy dynamic performances.

This restaurant serves sushi made mainly with fresh seafood from Kyoto and Maizuru. They carefully select ingredients for each season, so you can enjoy the rich blessings of all four seasons.

For the shari (sushi rice), they blend rice from Kyoto with akazu (red vinegar) and white vinegar sourced from Hyogo.

The recommendation is the selection of sushi made with jukusei maguro (aged tuna). You can enjoy various cuts, from lean akami (lean tuna) with a clean taste to otoro (fatty tuna) rich with the flavor of its fat.

By carefully aging it over the course of 1 week, they bring out the fish’s natural umami.

ddo

I could feel the care in everything, from the wara-yaki (straw-fired) preparation to the variety of nigiri (hand-formed sushi), and I was deeply satisfied by the chef's hospitality-filled service. This is what a truly famous restaurant is like. It was a great meal. This is one of the places I want to become a regular at.

Hisatoshi Fukagawa

"Kotobuki Fukagawa" is a sushi restaurant located a 9-minute walk from Kyoto Shiyakusho-mae Station on the Kyoto Municipal Subway Tozai Line. It serves Edomae-zushi (Tokyo-style sushi) that combines the tradition of Edomae sushi with the techniques of Kyo-zushi (Kyoto-style sushi).

At the lacquered counter seats, you can watch the preparation and enjoy chatting with the owner.

The sushi here is served on a tsukedai (serving board) crafted by a Kyoto lacquer artisan. The red lacquer finish brings out the glossy beauty of the sushi.

The shari (sushi rice) is cooked with bonito dashi using rice from the Tango production region, then finished with soy sauce blended with kombu kelp and bonito.

The creative sushi at Jiji, made for vegetarians, comes recommended too. It uses yuba (tofu skin), house-made nori tsukudani (seaweed simmered in soy sauce), and olive oil.

The combinations of ingredients feel fresh, and the taste is said to be addictive.

yuma900812

Every piece of neta (sushi topping) tasted fresh, with plenty of umami and sweetness, and the lightly seasoned shari (sushi rice) stayed subtle, which brought out the flavors of the ingredients even more and made the meal very enjoyable. My favorites among them were tuna, uni (sea urchin), Sea Bream, and tiger prawn.

This was my fourth repeat visit. Every time, the food is just too good, and that time there makes me happy. I think this is the best restaurant in Japan, and it’s a place I really love. This time again, I had an amazing time with the best sushi and the taisho (head chef). The maguro (tuna) toro-tekka (fatty tuna hand roll) was so good it blew me away. I’ll be back again.

Nijo Kigetsu

Nijo Kizuki is a sushi restaurant by reservation only, located a 7-minute walk from Kyoto Shiyakusho-mae Station on the Kyoto Municipal Subway Tozai Line.

There are seats in total with a warm hinoki (Japanese cypress) counter and a table for 4. Though compact, it has a relaxing atmosphere that helps you feel at ease.

The most popular Omakase sushi course lets you enjoy toppings the owner carefully selects at the market.

The sushi served here is full of thoughtful touches, with pieces finished with things like salt or a squeeze of sudachi (Japanese citrus). Depending on the topping, they use either akazu (red vinegar) or komezu (rice vinegar) in the rice when shaping each piece.

The A la carte menu item "aburi saba-zushi (seared mackerel sushi) (2 pieces)" can be added to the course meal. They lightly sear the surface of the rich mackerel and pair it with vinegared sushi rice.

Between the firm cooked sushi rice and the mackerel, they sandwich zha cai and chopped gari (pickled ginger).

Indian嘘つかない

Everything was delicious. The plates also had a nice, cohesive look that showed real attention to detail, and the sushi rice was slightly smaller to pair well with the drinks, which felt just right. They also offer a Japanese sake tasting flight, and that was the best part.

The dishes, made with one or two extra touches of care, and the sushi that makes the most of the ingredients are both very nice. My daughter, who loves Japanese sake, was unusually drinking in front of me. This place may be a good pick for casual sushi.

Temari-zushi (ball-shaped sushi) looked beautiful, of course, but the combinations of toppings and yakumi (condiments) were also spot on. Some looked exactly as good as you would expect, while others had such fresh combinations that I could not imagine the taste until I tried them. Once I did, every single one was delicious, and each piece brought a new surprise.

I visited for the mackerel sushi, but kodai (small Sea Bream) and shimaaji (striped jack) caught my eye, so I had them made into nigiri. I also appreciated that you can order the mackerel sushi and anago (conger eel) simmered pressed sushi in sets of 3 or 4 pieces. The food comes out quickly, so it is also a good place for people who want to eat quickly.

I visited for my mother's birthday. Everything we ate was delicious, and my mother said it was the best sushi she had ever had. We sat at the counter, and the chairs were soft and comfortable, so we were able to enjoy a very nice special occasion!

You can enjoy high quality Edomae-zushi (Tokyo-style sushi) in Kyoto♫ The shari (sushi rice) is made with akazu (red vinegar), and the toppings are fresh too. Putting soy sauce on this would be unthinkable! I ate everything just as it was served♫
