Located on the basement level 1 of Ginza Hachibankan, Tokyo Niku Shabuya Hideaki is a popular restaurant where you can enjoy shabu-shabu made with top-grade Wagyu in a refined, luxurious setting.

Here, you can enjoy Tajimaguro, one of the Tajima beef brands that rarely appears on the market.
With its low melting point, Tajimaguro is said to have a deep meaty umami and a melt-in-your-mouth taste. In addition to shabu-shabu, you can also enjoy it in the course through various cooking methods and ingredient pairings.
Photograph:サンショウマン
The Tajimaguro Strip loin shabu-shabu is said to let you taste the rich flavor of this high quality beef directly.
The sauces are house made ponzu and house made sesame sauce. Being able to change up the flavor and enjoy the ingredients in different ways is one of the pleasures of shabu-shabu.
The biggest draw of this restaurant is, without a doubt, the chance to compare several Special branded wagyu beef varieties (this time, Kobe beef and Miyazaki beef, among others) through shabu-shabu (Japanese hotpot) and sukiyaki (Japanese hotpot). For meat lovers, it is hard to resist being able to enjoy the differences in marbling, texture, and the sweetness of the fat in each cut.

A popular lunch item is the "yaki-shabu-ju (lightly seared shabu-style beef rice box)," which is said to have extra aroma from the quick sear.
The A5 Kuroge Wagyu (Japanese Black beef) has just the right amount of fat, with melt-in-your-mouth flavor and tenderness. The jubako (tiered box) also comes with tamagoyaki (Japanese omelet).

When it arrived and I opened the lid, I was greeted by the nice aroma of the meat. The meat was well seasoned, tender, and high quality, and it tasted really good. The raw egg also had a deep color, and it was excellent when mixed with the yaki-shabu.

Ginza Neya is a hideaway-style specialist restaurant for shabu-shabu (Japanese hot pot) and sukiyaki, located on the 10th floor of a building.
The interior has high ceilings and a stylish Japanese-modern feel, and it also offers Private room seating with views of the Ginza nightscape.
Rather than sticking to one production region, they deliberately select Domestic Kuroge Wagyu (Japanese Black beef) with excellent freshness and quality according to the season.
The water used for the shabu-shabu is 100% natural carbonated water from Oita Prefecture. The effect of the carbonated water makes the meat more tender and brings out even more of its flavor.
The lunch menu also features the popular "Aburi Wagyu Sashi-ju".
It uses lightly seared Wagyu Spencer roll, the same cut used for the shabu-shabu, so you can enjoy the meat's natural sweetness. You can choose your jubako meal in two flavors: tororo (grated yam) or sukiyaki.

At lunch, you can enjoy jubako (tiered box meal) made with A5 rank Wagyu. There are two choices, but on this day they ordered the half-and-half aburi Wagyu sashimi-style with grated yam & sukiyaki jubako. The richly marbled Wagyu looked great and had a smooth texture that melted in the mouth, and both the sashimi-style meat, which let the natural flavor of the beef come through, and the sweet-savory sukiyaki beef were very delicious.

For shabu-shabu, there are courses where you can compare A5-rank Kobe beef lean meat with marbled cuts.
They recommend trying it first without any sauce so you can enjoy the good taste and aroma of the dashi (Japanese soup stock). As time goes on, the flavors of the meat and vegetables melt into the dashi, adding more depth to the taste.
Depending on the course, they serve tenobe udon (hand stretched udon) To finish the shabu-shabu.
Though the udon is thin, it has a pleasantly chewy texture. It is said to soak up plenty of flavor from the dashi and the meat, and is well liked for how good it tastes.

・Kobe gyu (Kobe beef) dashi shabu
When you quickly swish the lean beef and tsukune (chicken meatballs) in the broth together with seasonal vegetables, the sweetness of the meat and the deep flavor of the dashi come together perfectly. The Kobe gyu was tender, and the more I chewed, the more umami spread through my mouth. It also paired really well with salt and yakumi (condiments). It warmed both body and soul.

The dashi-shabu let us fully enjoy Kobe beef lean cuts. It was very tender and had a nice texture in the mouth. We had it together with vegetables like mushrooms and green onions. It also paired perfectly with yuzu kosho (yuzu pepper paste)! To finish, the Goto Tenobe Udon had a nice chew, and the portion was just right. The meat for the shabu-shabu is Kagoshima Kurogeushi (Kagoshima Black Wagyu), a brand of Wagyu raised in Kagoshima Prefecture.
The finely textured beef with its beautiful marbling is said to have rich flavor and depth. The broth, made with hongarebushi (premium dried bonito flakes) from Makurazaki, Kagoshima Prefecture, is also well regarded.
The seiro-mushi (steamed in a bamboo basket) made with Kagoshima Kurobuta (Berkshire pork) and Kurogyu (Japanese black beef) is also one of the restaurant’s popular menu items.
The meat is steamed in a seiro, and its fat soaks into the vegetables, making them tasty too. Since it is seiro-mushi, it is also a healthy option, which is a nice plus.

Next came a tasting of the three major Wagyu varieties: Matsusaka Beef, Kobe Beef, and Omi Beef. They were plated like a Wagyu tower, and the look alone got me excited. In this Hot Pot with finely shredded kombu kelp, you swish thin slices of Kinka-buta (Kinka pork) loin and belly. The vegetables on the side and the yakumi (condiment) green onions are also very tasty.

After going back and forth between the tonkatsu (pork cutlet) course and the shabu-shabu (Japanese hot pot) course, I chose the shabu-shabu course. The meat from Yamagata Prefecture was tender, and I had really good meat that I could feel Manzoku with for the first time in a while.

Shoga no Kaori Dan is a restaurant where you can enjoy ginger shabu-shabu made with Domestic pork and sukiyaki with Saga Wagyu. In addition to about 100 kinds of shochu, the drink selection also gets good reviews for its Japanese sake, whisky, and more.
In the compact space, there is counter seating that is easy to use even when dining alone, along with tables for four.

The signature dish is shabu-shabu in the "Ganso Kogane Soup (Original Golden Soup)," with a strong ginger flavor.
The photo shows a two-flavor Hot Pot with "Ganso Kogane Soup" and "Shoga Hinabe Soup (Ginger Hot Pot Soup)." The balance of crisp lettuce, the sweetness of Domestic pork, and the fragrant ginger is said to be just right.

The “Saga Kuroge Wagyu (Japanese Black Wagyu) sukiyaki” is also popular. They make the sukiyaki in the Kansai style, starting by grilling the meat with zarame (coarse sugar).
Many people also say that the richness of the zarame takes the meat’s flavor up a notch. It is not too heavy, and they say you can enjoy it all the way to the last bite.

I visited for a birthday celebration. The shoga (ginger) shabu-shabu felt like a whole new experience! It was delicious, warmed me up, and left me completely Manzoku. I’ll visit again.

My overall impression was that it felt healthy but still very filling. We shabu-shabu two kinds of pork and a large amount of lettuce, then wrap them with the side of grated karami daikon radish (spicy daikon radish) and yakumi (condiments). It tastes great!

For the shabu-shabu, they offer A5 rank brand beef such as Yonezawa-gyu (Yonezawa beef) and Yamagata-gyu (Yamagata beef), as well as Kuroge Wagyu (Japanese Black Wagyu), and what you get depends on the course.
The staff cooks everything right in front of you in a fully attended style, which is another nice point since you can enjoy it at its best.

With the shabu-shabu course, you can enjoy Sanuki udon (thick wheat noodles) To finish. The noodles are pleasantly chewy and tasty.
With the udon and the soup packed with the good flavors of the meat and vegetables, you can enjoy the shabu-shabu to the very end.

The meat is A5-rank Yamagata gyu (Yamagata beef)♪The marbling is excellent. The staff prepare the shabu-shabu for you. It is a full-service experience, which is much appreciated(^^)Of course, the taste is great(^^)There are two kinds of sauce: ponzu sauce and sesame sauce.

What is especially recommended is the extra meat menu for sukiyaki and shabu-shabu. The lineup of premium Wagyu options includes luxurious cuts such as Matsusaka-gyu (Matsusaka beef) A5 filet and Yonezawa-gyu (Yonezawa beef) A5 Strip loin. The quality of the meat is excellent, and a quick dip in the hot broth for shabu-shabu brings out the meat’s natural flavor.

Samairina Otori is a popular restaurant where you can enjoy sukiyaki and shabu-shabu made with high quality A5-ranked kuromoge wagyu (Japanese Black Wagyu) at reasonable prices.
The gorgeous and stylish interior has rows of table seats, and curtains can divide the space for a Semi-private room feel. The seating is spacious, so you can relax and settle in comfortably.

The shabu-shabu courses feature items such as A5 marbled Miyazaki-gyu (Miyazaki beef) and Kuroge Wagyu (Japanese Black beef) Strip loin.
In addition, some menu items, including Kuroge Wagyu shabu-shabu, come with All you can eat options.

This is yakuzen shabu-shabu (medicinal herb shabu-shabu) made with five kinds of kampo (traditional herbal ingredients). The soup base uses chicken bones and pork bones. It is said to have a clean yet deep flavor.
For the shabu-shabu dipping sauce, you can choose options made with ponzu sauce or chili oil.

The interior has a calm atmosphere, and with many Semi-private room seats, you can enjoy your meal at a relaxed pace. The A5 kuroge Wagyu (Japanese Black beef) sukiyaki has a melt-in-your-mouth texture, and the yakuzen shabu-shabu (medicinal herb hotpot) broth is gentle on the body with deep flavor.

I had the pork yakuzen shabu-shabu (medicinal herb hotpot). It was my first visit, but they kindly explained how to eat it, so I really enjoyed the meal. Even though it was yakuzen, it had no strong distinctive flavor, and the spicy seasoning was very good! The udon to finish the meal was also nice and chewy, and the portion was just right for two people.

Shabu Shabu Onyasai Ginza 5-chome Ten is located about an 11-minute walk from Yurakucho Station and a 3-minute walk from Ginza Station. It is one of the leading shabu-shabu chain restaurants in Japan.
The menu includes All you can eat options and set meals, so you can enjoy shabu-shabu in a casual way.

They serve shabu-shabu with a wide range of meats, including shimofuri (finely marbled) Kuroge Wagyu (Japanese Black beef) and sangenton (three-way crossbred pork).
A plan that includes All you can eat options with more than a dozen kinds of meat is also recommended. To keep the meat fresh, they carefully cut it in-house.

The vegetables served with the shabu-shabu use seasonal Domestic produce.
Rather than sticking to one specific production region, they rotate through different production regions to source the most delicious vegetables at that time of year. With the All you can eat plan, you can get refills of the vegetables as well.
シマエナガマロ
What arrived was glossy beautifully marbled Special beef and crisp colorful vegetables arranged in a wooden box. A luxurious feeling of having a true "jewel box of vegetables" all to yourself! The meat, swished through the broth, is so tender it seems to melt softly in your mouth. In between bites, the rich flavor of the seasoned uzura (quail) eggs makes the All you can eat experience feel endless.

I chose the Sandaime tokusei tsuyu (third-generation special broth) and tonyu (soy milk), and then just kept eating meat. The ratio was about beef, beef, beef, pork, beef! The Sandaime dashi tsuyu (third-generation soup stock broth) had a good rich taste and was tasty even without any dipping sauce as is.
