I really liked the akazu (red vinegar) sushi rice, which was delicious. It had a nice looseness too. The goma-dofu (sesame tofu) was chewy and creamy, and so good I wanted another serving. The dashi in dishes like the fukahire (shark fin) chawanmushi (savory egg custard) and the steamed dish of shin-jaga (new potatoes) mochi and hamo (pike conger) was outstanding. The toro-taku (fatty tuna and pickled daikon roll) was the best I’ve ever had.

A 15-minute walk from Shin-Okubo Station, Shinjuku Sushi Hatsume is a hideaway sushi restaurant tucked away on the B1F of a building.
Inside, the shiraki (unfinished pale wood) counter creates a chic and calm atmosphere. There are 8 counter seats and a box table that can seat up to 4 people, and the restaurant is also available for private bookings.
The "omaru ebi (lobster) uni-tama sugiyaki" shown in the photo is a signature item served as a sakizuke (small appetizer) in some courses.
The fragrant aroma of toasted nori (seaweed), the springy texture of omaru ebi, and the rich savory taste of uni (sea urchin) come together in this excellent dish.

The "aoriika (bigfin reef squid)," scored with hidden cuts and lightly seared on the surface until fragrant, is a visually beautiful piece.
Searing brings out more sweetness, and you can also enjoy its rich, sticky texture. The fresh tartness of sudachi (Japanese citrus) adds a nice accent.
Everything was delicious from start to finish! The appetizer, especially the omaru ebi (lobster), was really good. The service was also polite, and I want to come back again!

Of course, all of the sushi was delicious, but what stood out most was the kaki fry (fried oysters). The coating was amazingly crisp, and the oyster inside was juicy. Also, the chawanmushi (savory egg custard) topped with gel looked fresh and new, and the flavor of the dashi was concentrated, making it excellent.
