Their grilling technique is said to be top-notch, giving the meat a crisp surface while keeping the inside tender and juicy. The balance of salt and tare (sweet soy-based sauce) is also said to be very good.

The interior is casual, like a typical yakitori restaurant. There was also a Private room in the back. For drinks, they had local sake and craft beers from the Kinki region as well! It is a sister restaurant of Motsuiki, a good motsu-nabe (offal Hot Pot) restaurant. It is a high-quality izakaya where takeout is great and eating at the restaurant is great too. Of course, the food is good! Not just drinking casually, but drinking with good food! And it is still reasonably priced. This is a well-loved spot that adds a little richness to everyday life!

The second half was a 5-skewer yakitori (grilled chicken skewers) assortment set. It arrived in this order: zuri (gizzard), heart grilled with salt, negima (chicken and scallion skewer), tsukune (chicken meatball skewer) with sauce, and seseri (neck meat) grilled with salt. Every skewer was very well done, from the grilling and the thickness of the meat to the level of salt. If anything, the pieces were on the larger side and had a soft, tender texture. That made it easy to really taste the aroma and flavor of the meat.

The stewed chicken is basically tori no doteyaki (chicken stewed in miso), if you will☝️It comes out bubbling away in a custom made bowl. The meat is so tender it falls apart, and I thought it was better than any doteyaki I’ve had❤️The yakitori (grilled chicken skewers) is carefully cut and delicately prepared so it won’t lose any of its flavor before it reaches your mouth❗️

Toriden Kashihara Ten is about a 5-minute drive from Yamato-Yagi Station in Kashihara, Nara Prefecture, and serves yakitori (grilled chicken skewers), kushiyaki (grilled skewers), kamameshi (rice cooked in an iron pot), and more, with a secret house sauce as the key to the flavor.

The rice is Koshihikari, produced in Ishikawa Prefecture, and each pot is carefully cooked from uncooked rice. Since they prepare it after you order, one of the best parts is getting to enjoy it piping hot and freshly cooked.

There is a wide variety, and both adults and kids will be Manzoku. I especially like the sake to ikura no kamameshi (salmon and salmon roe rice cooked in a pot). I always ordered it. That dashi (Japanese soup stock) is especially good. They also do a nice job of keeping skewers and other items warm, so it is fine to order a bunch at once〜. It was also nice that they had all kinds of desserts.

The Kara-age pieces were large and very juicy. I especially liked the kama-meshi (rice cooked in a pot), which had a nice savory taste from the chicken and dashi broth. At the end, I poured in the broth and finished it ochazuke-style. This broth was so good that I wanted to drink it on its own, so I asked for another serving. I also really liked the additional butabara (pork belly) ume shiso roll I ordered, which was juicy yet refreshing.
