The interior has a kominka-style (traditional Japanese house-style) space with a Japanese feel. There is also a fully private room with a teppan counter, where you can enjoy authentic cuisine in a private setting.

The high quality Akita-gyu (Akita beef), raised in a rich natural environment, is said to stand out for its strong umami and melt-in-your-mouth fat, and its best qualities really shine in Teppan-yaki.

There are also courses made with premium ingredients such as awabi (abalone) and Ise-ebi (spiny lobster), and you can enjoy pairings with more than 200 kinds of wine.

Honten Yamashina

"Honten Yamashina" is a Teppan-yaki restaurant where you can enjoy Omi gyu (Omi Beef), one of Japan’s three great Wagyu varieties. It is directly connected to Ginza Station and located on the 11th floor of GINZA PLACE, which is also popular for its night view over Ginza.

Inside, the restaurant has a high ceiling and an open, airy feel. With elegant interior touches such as chandeliers, the space feels refined and upscale.

The Teppan-yaki made with kanjuku Omi gyu (fully matured Omi beef), raised over a long 40〜50 month period, is popular. It is said to have an especially rich aroma and deep savory flavor.

The sides are also finished to a high standard, including seafood such as ise ebi (spiny lobster) and seasonal grilled vegetables.

The dishes also get high marks for their artistic presentation. The photo shows the "Yamashina Wagyu Slider." Since they grill every ingredient on the Teppan-yaki griddle, the bun turns nicely fragrant and the meat stays juicy.

Saga-gyu Kiraku Ginza is a Teppan-yaki restaurant themed around ingredients and meat from Saga Prefecture. You can enjoy the meal along with Japanese sake from Saga Prefecture. It is also conveniently close to the station, just a 1-minute walk from Ginza Station.

The interior has calm tones and is also equipped with Private room seating, with decor that seems to reflect Saga's traditions throughout.

Saga-gyu (Saga beef), one of the top brand-name wagyu that meets the standard for marbling, is said to bring out its deep flavor when cooked on a Teppan-yaki grill.

Fresh seafood and seasonal vegetables delivered directly from Genkai-nada (the Genkai Sea), which stretches from northern Kyushu to the Tsushima Strait, are also said to be excellent.

"Seiro-mushi (steamed in a bamboo basket)" is also one of the specialties. They carefully prepare each slice of Saga-gyu (Saga beef), making this a dish where you can enjoy its tenderness and sweetness. It lets you savor the natural good flavor of the ingredients without letting any of it escape.

It was my first time trying the smoked tongue Appetizers, and I fell in love with it. Wolfgang's Steakhouse Teppan, located a 5-minute walk from Ginza Station, is a Teppan-yaki restaurant where you can enjoy top-quality steak with a focus on quality, aging, and grilling.

"Teppan-yaki Shiroya Ginza Tei" is a restaurant where you can enjoy Teppan-yaki dishes such as aged Kitasatsuma-gyu (Kitasatsuma beef) from Kagoshima Prefecture and Ise ebi (spiny lobster). It is tucked away in a hideout-like spot on a back street, just a 2-minute walk from Ginza Station.

The main star of the Teppan-yaki is Kitasatsuma Gyu (Kitasatsuma beef). It is aged through a long 30-month raising period and is known for its fine-textured meat and melt-in-your-mouth fat.

The interior had a calm atmosphere, creating an environment where we could focus on the meal. I reserved the JPY5500 lunch course. Following the three kinds of Appetizers and soup, the vegetable Teppan-yaki arrived. Teppan Kaiseki Fuku is a restaurant that blends traditional Japanese kaiseki cuisine with Teppan-yaki. The calm interior is said to stand out for its eye catching counter made of clean hinoki (Japanese cypress).

They use Special A5 rank Kuroge Wagyu (Japanese Black beef), along with high end ingredients such as fresh Ise ebi (spiny lobster) and awabi (abalone).

The popular rare cut is called shintama (part of the round). It is a lean red meat with little fat and a strong savory taste. It is said to have such a bold flavor that a little salt is all it needs.

The course menu is completely refreshed every two months. It follows a style true to Japanese cuisine, letting you enjoy flavors unique to each season.

The photo shows the “hassun.” This is an Appetizers assortment served at the start of the course, with beautifully presented items that let you feel the season at a glance.

The main A5 kurokegyu (Japanese Black Wagyu) was very tender, packed with flavor, and highly satisfying.

The main draw is A5-ranked Kuroge Wagyu (Japanese Black beef). On this day, you could enjoy four cuts: uchimomo (inside round), shikinbo (part of the round), Knuckle main muscle, and Sirloin cap. As you would expect from A5-ranked beef, every cut was top quality, and it is honestly surprising that this is All you can eat. The uchimomo was especially good, with nice marbling and a touch of sweetness.

Ginza Teppan-yaki ORCA is a popular Teppan-yaki restaurant where you can enjoy high end ingredients in a casual way. The bright interior is not too formal, making it a relaxing place to dine.

The counter seats in front of the teppan let you fully enjoy the chef’s cooking up close. There is also one Private room, so it works well for many different occasions.

They offer A5 rank Sendai-gyu (Sendai beef) and a fine selection of premium seafood ingredients. They are said to manage the temperature with great care and cook each item with excellent heat control to bring out the full flavor of the ingredients.

They do not cut corners with the accompanying vegetables either, and the recommendation is to enjoy them simply with wasabi or salt.

The restaurant is full of exciting performance, from flambé with flames shooting up to bold grilling with the ingredients still alive.

The live omar ebi (lobster) is taken straight from the tank, so it is extremely fresh. Its savory aroma and sweetness are packed in, and even the claw is filled with plenty of meat.

The performance of cooking live omar ebi (lobster) and awabi (abalone) right in front of you is fun to watch, and things like the Surprising large pepper they bring out keep it interesting the whole time. The awabi steak was tender and the best shellfish dish I’ve ever had. Of course the food tasted great, and the chef was also fun to talk to, which made it a very worthwhile time.

I had a course featuring Matsusaka-gyu (Matsusaka beef). Good meat really does taste great. The well-marbled meat was very tender, with a texture that practically melted in my mouth. They said to enjoy it with salt, wasabi soy sauce, or yuzu-kosho (yuzu pepper paste), depending on your preference, but personally I thought it tasted best with salt.

The place is small, quiet, and has a calm atmosphere. Each chef wears a different colored tie, and their Teppan-yaki skills are graceful. The Appetizers change with the season, so if you visit again after a while, the contents will be different, making it something to look forward to every time. The ise-ebi (spiny lobster) and filet are also excellent. They also recommend wines, so this is a good pick for people who enjoy drinking.
