Hokkaido is known for producing many brands of beef and pork within the region, and for its great meat dishes. Among those meat specialties, this article focuses on shabu-shabu (thinly sliced meat briefly swished in hot broth), which is dipped in hot water or soup and eaten with sauce, and rounds up recommended restaurants mainly in Sapporo, where there are many restaurants. We will introduce restaurants where you can enjoy ingredients unique to Hokkaido, such as Wagyu, lamb, and seafood.

Hitsuji to Udon

In Hokkaido, there is a culture of eating lamb meat from sheep under 1 year old, and here you can enjoy lamb shabu-shabu.

The interior is a refined space, with fully private rooms and raised seating areas. It is on the basement level of a building, just a 1-minute walk from Susukino Station on the Sapporo Municipal Subway.

This is the set for lamb shabu-shabu, where you warm the meat in a piping hot Hot Pot and then dip it in several kinds of sauce before eating it.

It also comes with plenty of vegetables, so you can enjoy a well-balanced meal. You can also order it in a full-course kaiseki (traditional multi-course meal) style.

The star of the menu is grain-fed lamb, raised first on both mother’s milk and pasture, then grain-finished.

You can also order cuts like bara (belly) of Bibai Ezo Venison, which gives off a Hokkaido feel, as well as Shiretoko Wagyu.

To finish the shabu-shabu, they recommend udon made with Hokkaido-grown wheat.

No, no, it’s fresh lamb! This was unbelievably good! It felt completely different from any lamb I’d had before. Even the udon to finish had amazing flavor from the ingredients themselves, and even I, having grown up in Sanuki udon country, was impressed.

Dosan Youniku Kappo Ramu Pirika

Dosan Youniku Kappo Ramupirika is a restaurant that receives Hokkaido lamb from contracted farmers and butchers it in house.

The designer created interior has a stylish Japanese modern feel, with jazz playing in the background. The restaurant is about a 3-minute walk from Hosui-Susukino Station on the Sapporo Municipal Subway, on the 7th floor of Joyful Shuko Koji.

This restaurant serves hogget, which is between lamb from the young stage and mature mutton.

The hand-rolled meat is arranged with a good balance of loin and belly cuts, making it a shabu-shabu dish where you can enjoy both the lean meat and the fatty parts, and it comes with a soy-based sauce made especially for lamb.

For the finishing course of the shabu-shabu, the recommended choice is jagaimo ramen (potato noodles). The flavor of the lamb and vegetables comes through in the shabu-shabu broth, and they season it with kombu kelp tea and bonito flakes.

Add the chewy noodles here, and you get lamb Shio Ramen. You can also add an egg and turn it into zosui (rice porridge).

• Lamb shabu-shabu
This place is all about lamb, and everything is good. The main dish is lamb shabu-shabu. They slice the meat fresh on the spot with a slicer before serving it. You swish the thin slices of lamb in the hot pot, and the rich flavor of the lamb spreads across your whole mouth. It is also tender. Since each slice is thin, it is easy to eat lightly.

They served each dish at just the right timing and chatted with me in such a natural way. The lamb was as delicious as ever! Since I was dining alone, I really appreciated all the thoughtful care they showed me♪

Hokkai Shabu Shabu

A 2-minute walk from Susukino Station on the Sapporo Municipal Subway, Hokkai Shabu Shabu on the 7th floor of a building has been serving lamb shabu-shabu since its founding in 1967.

In addition to table seating, there is also a large hall that can accommodate up to 60 people at once.

The meat here is lamb from New Zealand, raised on grass. They roll it up at peak freshness and then flash freeze it, which seems to lock in all the flavor.

The key is the secret sauce, which is said to be aged for six months using more than 20 ingredients.

They offer an All you can eat course for hokkai shabu-shabu nabe (Hokkaido-style shabu-shabu Hot Pot), where you can fully enjoy not only Special lamb but also Hokkaido pork.

Tawara onigiri (straw rice balls) and finishing ramen are also included in the All you can eat option, so it has a reputation for being highly satisfying. You can also add an All you can drink plan.

・Hokkai shabu-shabu Hot Pot
I was worried there would be too much lamb to finish, but once I swished it in the pot, it became easy to eat in just the right size! I finished it easily. There were no off notes, but it still had a clear lamb flavor, and for the final ramen, they served it Tsukemen-style with the dipping sauce from the lamb... The nice wheat flavor and the light lamb aroma were a great match and tasted delicious.

Shabu Shabu Retasu Sapporo Ekimae Ten

A 1-minute walk from Sapporo Station on the Sapporo Municipal Subway, Shabushabu Retasu Sapporo Ekimae Ten is located on the first basement floor of a building and has become a popular spot where you can enjoy shabu-shabu with one Hot Pot per person, just the way you like it.

As the name suggests, there is a refrigerated display case that looks like a field lined with lettuce.

In addition to standard kombu kelp and soy milk, there are 8 kinds of broth including yakuzen (medicinal herb blend) and spicy jang, and each person gets their own Hot Pot. Even if the people you visit with have different taste preferences, it seems like everyone can leave Manzoku.

As for the dipping sauces, you can choose from as many as 29 kinds, so you might not be able to try them all in just one visit.

The lettuce, which is also the restaurant's name, and the vegetables sourced from farmers in different regions are also appealing. Their bright colors make their freshness clear.

Because the All you can eat courses are so extensive, you can fully enjoy the meat and vegetables. Try eating your way through them while adding your own touches with yakumi (condiments) and salt.

hokkaido_gourmet

Shabu Shabu Retasu offers All you can eat colorful vegetables and meat! The side menu is also full of options like caprese and pickles. Best of all, the dipping sauce bar is fun too!! My personal recommendation is the combination of green onions, nuts, salt, and olive oil!

This was the one-person-one-pot shabu-shabu place I had wanted to visit. You can order extras on your smartphone, and they bring them out pretty quickly, so you can keep eating at a good pace. We went with the collagen Hot Pot and soy milk Hot Pot, and they also have spicy dipping sauces and more, so you can change up the flavor. There was a wide variety of mushrooms, and I was very Manzoku.

Zen

Zen is a specialty restaurant on the basement level of a building, just a 3-minute walk from Odori Station on the Sapporo Municipal Subway, where you can enjoy high-quality beef in shabu-shabu and sukiyaki style.

In addition to fully private rooms with Sunken kotatsu seating, the restaurant also has table seating, and staff in traditional Japanese attire serve the food.

This is the real deal when it comes to shabu-shabu (Japanese hotpot). While it is hard to choose between it and sukiyaki (Japanese hotpot with sweet soy broth), try giving priority to the shabu-shabu, where the house-made ponzu sauce and sesame sauce really make the flavor.

If you order it as a course meal, it comes with a 7-piece set of premium nigiri sushi for each person.

In addition to A5 rank Wagyu Spencer roll from Hokkaido, they offer carefully selected Kuroge Wagyu (Japanese Black beef) sourced from around Japan.

Another highlight is the “Herb Pork” raised in Makkari-mura (Makkari Village), Hokkaido, a branded pork fed on cinnamon and ginger. It is said to be tender, with rich and tasty fat.

りゅうちゃん0910

I enjoyed the shabu-shabu right in front of me in the nabe (Hot Pot), and even got extra momiji-oroshi (grated daikon with chili) and green onion, eating it with refreshing ponzu sauce. The staff all served us with smiles and were very pleasant, and I was very Manzoku.

The interior has a homey feel, and with counter seats, table seating, and Private room options, it is easy to use for many different occasions. The restaurant is located on the 5th floor of a building, a 3-minute walk from Susukino Station on the Sapporo Municipal Subway.

The "Beef Tongue shabu-shabu Hot Pot" can be ordered from 2 servings, and it seems they Specially select production regions for the featured Beef Tongue based on the season.

It also comes with plenty of vegetables, mainly mushrooms, and after swishing them through the house special broth, you enjoy them with homemade ponzu sauce.

What you will want to eat to finish your shabu-shabu is ramen made with the restaurant's original kombu kelp noodles. They knead kombu kelp into the noodles, which gives them a pleasantly chewy texture.

Other popular choices include healthy dishes featuring Beef Tongue, "sangen-ton (three-breed pork)," and "Date-dori (Date chicken)" steamed in a seiro (bamboo steamer).

Hokkaido Shabu-Shabu Daichi

Hokkaido Shabu Shabu Daichi offers a variety of seating options and aims to create a place where everyone, from small children to older guests, can enjoy shabu-shabu.

They have Private rooms with sofas and family rooms. The restaurant is on the second floor of a building, just a 1-minute walk from Susukino Station on the Sapporo Municipal Subway.

The lamb roll at "Daichi Shabu Shabu" is said to be carefully prepped by skilled chefs, giving the meat a light taste while still bringing out its good flavor.

As for the broth, diners can choose from a simple kombu kelp broth made to pair well with the dipping sauces, a bonito-based golden broth, or a broth with chili peppers.

The restaurant’s original brand pork, “Susukino Akane Buta (Susukino Akane Pork),” is also not to be missed. Raised at a contracted farm in Yoichi, Hokkaido, this pork is known for its rich flavor and sweet fat.

Along with the Special Japanese Black Wagyu selected by the head chef, going with A5-rank “Saroma Wagyu” as the star is also a great choice, especially for its higher amount of marbling.

Wa & Villa Resort Private room Bishoku Dining Shikibu Sapporo Ekimae Ten

Wa & Villa Resort Koshitsu Bishoku Dining Shikibu Sapporo Ekimae Ten is a popular restaurant where you can enjoy a variety of ingredients in shabu-shabu (Japanese hotpot) style.

Inside, the restaurant has designer Private rooms and a stylish space. It is located on the 4th floor of a building right in front of an exit of Sapporo Station on the Sapporo Municipal Subway.

Not only beef, pork, chicken, and lamb, but also seafood such as akaebi (red shrimp) and buri (Japanese amberjack) is available for shabu-shabu. With so many options, you might have a hard time choosing.

The selection is full of ingredients unique to Hokkaido, including Hokkaido brand pork, marbled Beef Tongue from Saroma, and tako (octopus) from Shiretoko Rausu.

If you want to eat more vegetables, you can add an assortment called “Honjitsu no Osusume Yasai no Shabu-shabu Mori-awase (today’s recommended vegetable shabu-shabu assortment),” and you can also order vegetables that are unusual for shabu-shabu, such as zucchini and radish.

To finish, the sesame-scented udon or ramen comes recommended, and you can also have it made into zosui (rice porridge).

Shabu-shabu Tonjin

A 2-minute walk from Hosui-Susukino Station on the Sapporo Municipal Subway, Shabu Shabu Butashin is on the first floor of a building and serves Hokkaido brand pork in shabu-shabu style.

The restaurant's Private rooms are said to feel like a private hideaway for adults. Reviews also say the whole interior is refined and calm, making it a place where you can enjoy your meal at a relaxed pace.

This restaurant mainly serves two kinds of branded pork, and each set comes with meat, vegetables, and broth.

In particular, the slightly sweet Tongami-dare (house dipping sauce) is said to go very well with the broth. After draining the meat well, dip it in the sauce before eating.

The photo shows a brand pork called Yume no Daichi, known for the strong sweetness of its fat and the rich natural flavor of the meat itself. They slice it only after an order comes in, so it is very fresh.

The other brand pork is Shiretoko Pork. Its fine texture and the fact that it does not release scum during shabu-shabu are part of its appeal.

ふりーきー

・Shiretoko buta (Shiretoko pork) shabu-shabu
The broth was also good, and the pork was light and easy to eat. We also ordered additional tako shabu (octopus shabu-shabu). The à la carte dashimaki tamago (Japanese rolled omelet) and otsumami menma (seasoned bamboo shoots snack) were tasty too.

It was bright, clean, and had a nice atmosphere, which made it very pleasant. Shiretoko-buta (Shiretoko pork) was very delicious. Hokkaido Shabu Shabu Pokke Dai3 Green Building Ten

A 1-minute walk from Susukino Station on the Sapporo Municipal Subway, Hokkaido Shabu Shabu Pokke Dai3 Green Building Ten on the 5th floor of a building is known for its tasty shabu-shabu served in a special two-flavor Hot Pot.

In addition to counter seating, the restaurant also has raised tatami seating and Private room seating.

They offer a wide lineup of branded meats, including Australian lamb, Ezo Venison from Shiretoko, and Rusutsu Yotei Buta (Rusutsu Yotei pork). They also carry Shiraoi Gyu (Shiraoi beef), which is said to have beautifully marbled meat.

Some meats depend on availability, so it may be a good idea to check in advance.

A highlight is the special two-flavor Hot Pot. You can enjoy both a simple broth made only with kombu kelp for eating with dipping sauce, and a savory spicy salt soup with black sesame.

The salt soup uses black pepper as a hidden flavor, which apparently makes it a great match for lamb.

About a 5-minute walk from Susukino Station on the Sapporo Municipal Subway, this restaurant on the 4th floor of a building is written as "〼" and read as "Hitomasu," and it is a seafood shabu-shabu specialty restaurant that serves individual Hot Pot portions.

In addition to counter seats that make it easy to drop in when you want to eat alone, it also has table seating that is easy to use with friends and family.

For the "Masu shabu-shabu set," you can choose one item from Sea Bream, buri (yellowtail), or salmon. It also comes with three kinds of kobachi (small side dishes) and vegetables.

The signature "tai (Sea Bream) kamameshi" takes time to prepare, so it is a good idea to order it first.

Since "〼" is the restaurant name Hitomasu, you will also want to try the Japanese sake served in a masu (wooden sake box).

Inside, there are counter and table seats, making it easy to choose seating to match the occasion.

Because it is a one-person, one-Hot Pot style, it is popular for letting you enjoy shabu-shabu at your own pace.

The photo shows furano Wagyu (Wagyu from the Furano area of Hokkaido) roast, which is produced in the Furano area of Hokkaido and is known for its melt-in-your-mouth texture, and Strip loin is also one of the options. After enjoying the meat and vegetables, you can finish by adding zosui (rice porridge) or udon to the remaining soup.

One review said that if they have Obira Wagyu in stock, it is highly recommended to order it, as it is said to be very rare due to the extremely small shipment volume.

They also serve shabu-shabu with Beef Tongue, lamb, and chicken. If you want to enjoy plenty of vegetables as well, it is also recommended to add the "7 kinds of vegetable set," which includes naganegi (long green onion) and enoki mushrooms.

I had venison shabu-shabu made with leg meat! It had no distinctive flavor or off notes, and it was so light that I could eat a lot of it! It didn’t leave me feeling heavy at all, and it was excellent!

Inside, anime items were displayed here and there, and some anime was playing on the screens as well. It also had a concept cafe-like atmosphere, and the staff wore Japanese style outfits, giving it a unique look. It felt unusual and a little surreal, but it was a space where a playful spirit also came through.

Shabu-shabu Asari

Shabu-shabu Asari is a popular restaurant about a 2-minute walk from the Goryokaku Koen-mae stop on the Hakodate City Tram, where you can enjoy high quality meat at reasonable prices. They also sell meat for takeout.

The interior has a calm Japanese style atmosphere, with Private rooms featuring Sunken kotatsu seating as well as a spacious room that can accommodate up to 25 people.

The A5-ranked marbled meat of Domestic brand beef can be ordered not only as shabu-shabu, but also as steak or sukiyaki (Japanese hot pot).

The shabu-shabu set comes with kishimen (flat wheat noodles) or rice to finish the meal, and even dessert. You can expect a full and satisfying dinner time.

They are known for a lineup of beautifully marbled and tasty meats, including the "Special Kuroge Wagyu (Japanese Black beef) Roast" and the "Special Kuroge Wagyu Tenderloin."

They also serve cuts such as Top blade from Kuroge Wagyu and roast from "Iberico pork." They also offer a good selection of side dishes, including oxtail soup and salads.

The portion size was just right, and the shabu-shabu broth, sauce, and meat were all delicious! At the end, I had the broth made into soup and ate kishimen (flat udon noodles), and I could really taste the flavor of the vegetables and meat. The mix of light × rich was so good I got hooked on it,, I want to go again.
