A unique udon (thick Japanese wheat noodles) made by grinding whole wheat kernels with a stone mill, much like soba (buckwheat noodles). It is best to first enjoy it simply with salt.
The house milled udon is coarsely ground with a nice, distinctive texture, and it is said to have the full natural aroma and sweetness of the wheat.

You can choose the udon from either jikaseifun sobabiki (house-milled coarse-ground flour) or a custom blend made by combining wheat flour from multiple production regions.
After 13:00, you can order a la carte dishes centered on Japanese cuisine, and in the evening they also serve grilled dried fish. To go with the food, you can also enjoy assorted varieties available alcohol such as Japanese sake.

First, sprinkle on a pinch of the salt served for the udon and take a bite. The fresh, juicy noodles let you taste the sweetness of the wheat along with the rustic graininess that comes from stone milling, and the aroma spreads with every chew. Unlike pure white udon, they have a unique look with a color and flavor closer to soba, which may divide opinion, but I personally had a very good impression.

I went right when it opened on a weekday, but it was full in about 30 minutes. The udon had motsu (offal) with a great bite, and the noodles themselves were pleasantly firm, with more flavor coming out the more I chewed, so it was very delicious! I’d definitely love to go again the next time I’m in Osaka!

It was exactly authentic Sanuki udon (Sanuki-style udon). The maitake ten served on the side was also nice and crisp, which worked really well. The udon stays true to the basics with a no-nonsense style. The dashi uses no artificial seasonings. They serve the noodles freshly cut and freshly boiled, and the tempura freshly fried. The tori-ten bukkake (chicken tempura bukkake udon) is the most popular item. The house-made noodles have a nice firm bite and plenty of flavor. You can switch to ki-joyu (fresh soy sauce), and this ki-joyu is excellent. They use Kyozo, a small-batch ki-joyu made in Kotohira, Kagawa, specifically for udon.

They also offer plans that include Japanese food, plans where you can choose the type and portion size of the To finish udon, and plans where the udon served To finish the udon suki becomes All you can eat.
These labor intensive udon noodles are started only after an order comes in. Tarai udon, which lets you enjoy the taste of the udon directly, comes in hearty portions for 3–4 people or 5–6 people.
The thin noodles are smooth and supple, and they apparently go down more easily than you might expect.

I rushed over after hearing rumors that you can actually enjoy thin noodles at this well-known go-men (firm noodles) spot. I ordered the chilled tarai (tub-style serving) for 4 portions. It was an incredible amount, but we finished it surprisingly quickly. After drinks, the way to wrap up a night in Kyobashi is definitely with thin udon.

This hidden udon restaurant on the first basement floor of the Nippon Seika Building draws lines at lunchtime.

It was slightly sweet, with good dashi flavor and umami, and it was the kind of taste that made me want to keep sipping it. This is a place that makes you want to try the curry udon and Rice bowls too.

A famous restaurant for Sanuki udon made with the old fashioned fumi-seiho (foot kneading method). Both the exterior and interior have a Japanese look, and the restaurant has a nice local atmosphere.
Along with the udon, they also recommend oden (Japanese simmered dish), a Japanese stew where the dashi broth makes all the difference.

The signature dish is kamaage udon (udon served hot straight from the pot). After boiling, the udon is transferred to a bowl together with the cooking water, then eaten hot by dipping it into the sauce.
While the udon cooks, you grate the yakumi (condiment) ginger yourself to get it ready. The freshly grated ginger has a nice fresh aroma.

First come the green onions and ginger. The dashi (broth) in a tokuri (ceramic sake flask) is served. The ginger is the kind you grate yourself. Before long, the star of the meal, the udon, arrives. I first try slurping the udon on its own. It is pleasantly chewy with just the right bite, and you can smell the wheat. I dip it into the light dashi and slurp it down all at once. Along the way, I add the ginger, the tenkasu (crispy tempura bits) from the table, and ground sesame in that order to change up the flavor, then finish it all.

They say you should first taste the noodle dipping sauce as is. After that, it tastes great if you add the green onions, tenkasu (tempura bits), sesame seeds, and other condiments from the table. You can also add freshly grated ginger. The dipping sauce is warm. The udon is a standard thickness, with a nice chew, and very good. Next time, I’d like to try the bukkake udon too.

The aroma rising from the udon soup comes from dashi made from dried flying fish. Called ago-dashi (flying fish stock), it is known as a premium ingredient with roots in the Kyushu region.

I made a reservation and went for lunch. I ordered Kitsune (deep-fried tofu) udon. It felt lighter and less sweet than the usual Kitsune udon. It might be just right To finish after drinking. The restaurant was full of customers!

Osaka's soul food, kasu udon, is also on the lineup, so I ordered it without hesitation. Abura-kasu (fried beef intestines) is made by deep-frying beef intestines until crisp, and when added to udon, it has a nice crispy yet light texture. The rich flavor of the abura-kasu melts into the dashi broth and makes it outstanding.

It came with so much tori-ten it almost felt like too much. The udon was chewy and had a nice bite, and it was delicious! Lunch also comes with gomoku gohan (mixed rice) ✨

It’s a bit of a walk from Esaka Station. There are quite a lot of seats, but it still gets full. The menu is very extensive and great. The udon noodles are quite thick, with a chewy texture that tastes great! The specialty is niku udon (meat udon). They apparently do not use additives, so it has a very gentle flavor. I even went ahead and ordered the tori-ten tartar Rice bowl (chicken tempura with tartar sauce Rice bowl) too.

This restaurant is always good. I had the tori-ten udon and motsu nikomi (stewed offal) udon. Even though it was hot udon, the noodles kept their chew all the way through, and just like the restaurant’s name suggests, the broth had great dashi flavor, so I enjoyed every last bite. Once the weather gets warmer, the cold udon is delicious too, so I’ll definitely come back again.

The menu has lots of options and the food is good, so it gets busy at peak hours. I wanted both a Rice bowl and udon, so I went with the set of katsu Rice bowl and creamy mentaiko udon (hot). The creamy mentaiko udon was rich, and a squeeze of lemon made it light and tasty. The katsu Rice bowl had cutlet at just the thickness I like, and the dashi broth was also delicious! I’ll be back!
