"Soba Kaiseki Yuzuriha" uses buckwheat flour made from whole grains of Gen Soba sourced from the Yatsugatake foothills, ground with a stone mill. The soba has a dark, translucent appearance with speck...les, offering a firm and rich texture that bursts with earthy flavors. The dishes are served in Kanayama pottery, featuring a natural glaze created by fire and pine ash, each piece showcasing its unique character. We highly recommend enjoying the soba shochu with soba-yu (buckwheat noodle water) served in a Kanayama glass alongside the evening soba kaiseki course.
